Carmelized Bananas on Peanut Butter Toast


This recipe came about because I wanted something like pancakes but healthier and using toast. Plus I had extremely ripe bananas needing to be used and absolutely no desire to bake anything. I wanted something super easy but different. My directions are a bit slack, but hopefully you can figure it out.

Carmelized Bananas on Peanut Butter Toast

INGREDIENTS
1 ripe banana
2 pieces of bread, for toasting
agave nectar
sprinkles of cinnamon
peanut butter
cooking spray

DIRECTIONS
Spray pan with cooking spray. Slice banana and place into pan. Drizzle agave nectar over banana slices in pan. Cook on medium heat for several minutes. Sprinkle banana mixture with cinnamon. While the bananas continue cooking, toast the two slices of bread. Try to time this so the bread will be ready when the bananas are.

When the toast is ready, spread peanut butter onto slices. Split the carmelized banana mixture in half and add it to each slice of bread. Eat!

(The banana topping itself can be used in many ways, over vanilla ice cream, over actual pancakes, over [white] rice, etc.)
