Vegan Chicken Salad

Great Grandma's Fruit Salad and Vegan Chicken Salad Sammie

I think the next time I make this I will try it with a little more dill, or maybe with spicy dijon mustard. It was a really good sammich though. Just make sure you give it a little time for the flavors to merge in the fridge.


Vegan Chicken Salad Sammie
(inspired by Food Network Kitchens)

INGREDIENTS
4 cups chicken-style seitan, diced 1
1 stalk celery, diced
4 scallions, trimmed and thinly sliced
1 teaspoon tarragon
1 teaspoon dill
2 tablespoons parsley
1 cup vegan mayonaise2
2 teaspoons lemon juice
1 teaspoon Dijon mustard
2 teaspoons salt
black pepper to taste

DIRECTIONS
In a mixing bowl, toss together the seitan, celery, scallions and herbs. Set aside.

In a small bowl, whisk together the vegenaise, lemon juice, mustard, salt and pepper to taste. Add to the seitan and mix gently until combined. Refrigerate until ready to serve.

Serve on a bed of lettuce with sliced tomatoes, in half an avocado, or as a sandwich.

i usually use tofu, maybe i will use seitan next time. this looks fantastic!

I almost always choose seitan over tofu. I adore the stuff. :)
