Earth Balance makes the best vegan margarine and it is perfect for a butter replacement in ANYTHING...cooking, baking, spreading on toast, whatever. They do make a non-vegan version, so just make sure you get the original vegan version. It comes in stick form, perfect for slicing into baking measurements, as well as a tub.
You'd think I'd have more to say about Earth Balance, considering how much I use it and love it, but I can't think of a thing.
