Pecan Pie Muffiny Cups
These Pecan Pie Muffiny Cups are a great alternative to making an actual pecan pie. They have the pecan pie taste with none of the hassle of making a pie. This recipe is super uncomplicated, quite easy to make with a very festive fall flavor. I liked these, which is a good thing because I made more batches than I needed and had quite a few leftovers to eat. I renamed them Muffiny Cups as opposed to Muffins because they really don't feel like muffins, they are not big and fluffy and don't even have muffin-tops. They are slightly more dense and compact with just a bit of glazed cakiness. If you don't like pie crusts, and there are more of us out there then you would think, this might be the recipe for you!
