Hazelnut and Chard Ravioli Salad

My sister and brother-in-law brought this colorful dish to the Thankful Veghead Dinner. I was super excited because it has swiss chard greens and butternut squash in it, perfect ingredients for a fall dish, and it really seemed unique with the ravioli.

Anyway, I was pretty impressed with it, though I really only had a sampling. You can find some vegan ravioli options, in several flavors, at Whole Foods in their freezer section. I glanced at the recipe, and it doesn't really seem to have anything that requires much substituting. My sis and bro-in-law brought Daiya Italian Shreds for garnish, but you can easily use one of the vegan Parmesan cheeses, Parma Vegan Parmesan or Galaxy Foods' Vegan Grated Topping Parmesan flavor. Both are available at Whole Foods. Check the Italian aisle (non-perishable) for the Parma and the refrigerated cheese section for the Galaxy Foods brand.

Oh crap I missed Veghead? I was just about to check my emails to see when it was exactly! In my head I thought it was next week. I'm sorry I missed it :(
