Spicy Potato Salad

My dad likes spicy, hot foods and he likes potato salad, so I made this spicy potato salad yesterday for Father's Day. I suspect it wasn't as hot as he would like it, but there were other people who wanted to be able to eat it too....like me!



Spicy Potato Salad

Makes about 4 servings
INGREDIENTS
4 medium potatoes, chopped with skin on (red, white, or yukon gold)
1 dill pickle, diced
1 stalk celery, diced
1/2 red onion, diced
1/2 green bell pepper, diced
1 tablespoon spicy brown mustard
1/2 cup vegan mayonnaise1
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon chili powder
1 tablespoon hot sauce

DIRECTIONS
Chop potatoes into bite-sized pieces and boil until cooked through. While the potatoes cook, dice the pickle, celery, red onion and bell pepper.

In a large bowl mix the Vegenaise, garlic powder, paprika, chili powder, mustard and hot sauce. Test the heat level and add spice to taste.

When the potatoes are done cooking, drain them and add the potatoes to the bowl with the spices and dressing. Add the pickle, celery, onion, and bell pepper to the potatoes and dressing. Mix together carefully so as not to mash up the potatoes. Add salt and pepper to taste.

Refrigerate and serve chilled.

Hah! I think this one's base is good, but it just needs a little something more. Maybe a splash of apple cider vinegar...
