Chicos are dried corn kernels, traditionally kiln or oven-roasted dried sweet corn. Beans are those typical of the Southwest; black beans, pinto beans, other common beans, and tepary beans. Chicos and Beans is a traditional Southwestern food from both American Indian and Hispanic cultures. Beans and corn combine to create a complete protein.
