I recently hosted my sister's baby shower; we had a milk and cookies dessert bar. Most of the cookies ended up being vegan, because I made them. However, one of her friends is strictly gluten-free, so I had to find a good gluten-free cookie recipe. I'm not very experienced or knowledgable about GF baking, so this is always a challenge for me. I googled some cookie recipes and finally settled on this Peanut Butter Quinoa Cookie recipe which also happened to be vegan. I didn't even have time to make a practice round. And yet, they turned out pretty dang good I think. Especially for GF cookies. In fact, the gluten-free friend asked for the recipe. And a couple of people really liked them just as cookies not realizing they were special GF.

Some ingredient tips... I found the quinoa flakes and brown rice flour at Sprouts. I already had the tapioca flour, Ener-G Foods Egg Replacer, and xanthan gum from previous baking experiences, and I think you can find them all at Sprouts, Whole Foods, and probably even Fry's Marketplace. I couldn't find vanilla POWDER anywhere, so I just used regular vanilla extract. I did have to make a special trip to Whole Foods for millet flour, I couldn't find that at Fry's Marketplace or Sprouts. The rest should be fairly easy to find at Sprouts, Fry's Marketplace, Whole Foods, and most mainstream grocers. Anyway, enjoy!
